A Healthy Appetizer Recipe You’ll Love
Whenever I have a dinner party I always opt for quick and easy appetizers. Appetizers that will keep my guests (and their tummies) happy until dinner, but which don’t take an enormous amount of effort on my part. My focus is usually on the main course and making sure it’s cooked to perfection.
These smoked salmon, avocado and cucumber bites are thus the perfect appetizer. Not only are they gluten-free, dairy-free, paleo and Whole30 (which means they’ll likely satisfy the majority of your guests) they’re fresh, light and delicious. Whenever I make this recipe all of the bites disappear as quickly as they’re presented. Always the sign of a successful appetizer.

How to Make Cucumber Bites
I’ve been know to whip up this recipe as a weekly snack. It’s so incredibly easy and I can pop a few of the bites in my mouth to tide over any afternoon hunger pangs. I can slice the cucumber on an as-needed basis throughout the week or slice a whole cucumber and store the slices in water, as I show you on my Summer Meal Prep video.
Then, it’s as simple as mashing an avocado with a fork and topping with a few pieces of smoked salmon. Talk about a tasty snack.
The recipe below makes enough for 12 bites (depending on the size of your cucumber and avocado). But you can easily double or triple this recipe if it’s a holiday or large gathering. Enjoy!

Ingredients
1 medium cucumber1 large avocado, peeled and pit removed1/2 tbsp lime juice6 oz smoked salmonchives, for garnishblack pepper, for garnish
Instructions
Slice the cucumber approximately 1/4-inch thick and lay flat on a serving plate.Add the avocado and lime juice to a bowl and use a fork to mash until creamy.Assemble the bites by spreading a small amount of avocado on each cucumber, then topping with a thin slice of smoked salmon.Garnish each bite with finely chopped chives and cracked black pepper. Serve immediately.
