Grilled Albacore with Citrus Ginger Sauce
I try to buy direct from fishermen when I can, but if not, I’m fortunate to live close to Santa Monica Seafood – a great seafood store that always has a large selection of high-quality fish. And when it comes to fish, quality definitely matters. So splurge for sashimi grade quality. You’ll thank me for it!
Anyway, while I was shopping at Santa Monica Seafood the other day they had albacore steaks on sale. Yippee…because I love albacore.
Grilled albacore is super easy to cook. Throw it on the grill, flip after a couple minutes and voila – you’re done. But promise me one thing when you cook this. Please, please, PLEASE don’t overcook it!
Tuna steaks are meant to be pink in the center. They taste a million times better that way. And if you overcook them, they’ll taste dry and blah. Big difference between amazing and blah. I’m just gonna take a stab in the dark, but I think you’ll like amazing waaaay better.
Now for the citrus ginger sauce. In a word. YUM!
Sweet, bright, tangy and delish. So drizzle generously. On both the grilled albacore and cauliflower rice. Of course, you can use regular rice, but why not go for the extra veggies with my fave cauliflower rice?
As for the micro greens, well, don’t they just think they look cute on top? They also make people smile. And smiling makes everything better.

Grilled Albacore with Citrus Ginger Sauce

One of the things I love about living in California is the fresh fish and this grilled albacore is no exception. It also only takes a few minutes to cook!
Ingredients
4 albacore steaks4 cloves garlic, minced2 tbsp olive oil1 cup micro-greenssalt and pepper
Citrus Ginger Sauce:
1/2 cup orange juice1 tbsp lemon juice1 tsp lime juice2 tbsp honey2 tbsp coconut aminos1/2 tbsp ginger, minced1 tsp white wine vinegar
Instructions
Make the cauliflower rice (recipe) and keep warm on low heat.Mix all of the citrus ginger sauce ingredients together in a small saucepan over medium heat. Bring to a boil, then reduce to a simmer for 4-5 minutes.While the sauce is simmering, season the albacore with salt and pepper. Mix the garlic and olive oil together in a small bowl and rub on both sides of the fish.Heat a grill to medium-high heat. Place the albacore on the grill and sear for 2 minutes each side. Do not overcook! The fish should still be pink in the middle.Place one cup of the cauliflower rice on each plate. Add the albacore steaks on top. Drizzle generously with the citrus ginger sauce and place a small handful of micro greens on top. Serve immediately.
